Romano Dal Forno is the other great pole of the Amarone world — a style opposite and complementary to Quintarelli. A visionary technician of eastern Valpolicella (Val d'Illasi) and a former pupil of Quintarelli himself, he has created an Amarone of absolute density and concentration: drying with computerised ventilation, fermentation in stainless steel, 24 months of ageing in new barriques. 2006 is considered one of the finest Dal Forno vintages: JS 96, RP 97.

Romano Dal Forno's Amarone della Valpolicella Riserva 2006 comes from the Monte Lodoletta vineyard in Val d'Illasi, alluvial soil (70% gravel, 15% silt, 15% clay), at about 300 m above sea level. Blend: Corvina 60%, Rondinella 20%, Croatina 10%, Oseleta 10%.
The finest grapes (vines >10 years old) are dried for 3 months on plastic plateaux in rooms with a computerised ventilation system that maintains a high, constant airflow. Pressing in mid-December, fermentation in steel at 28 degrees for ~15 days + 2 days of final maceration.
In mid-January the wine enters new barriques for 24 months, with a slow resumption of fermentation. A further 36 months of ageing in bottle before release.
2006 in Valpolicella was a vintage of great ripeness and fruit concentration.
The Dal Forno 2006 is considered one of the cellar's masterpieces: an aromatic profile of rare complexity, exceptional tannic density, decades-long ageing potential. Still very closed, it requires extensive decanting (3+ hours) or further years in the cellar.

Sensory profile
COLORE
Saturated ruby red, impenetrable and highly concentrated. Dense, viscous appearance, a sign of high extraction and substantial structure.
PROFUMO
Complex, intense profile: macerated wild berries, dark chocolate and tobacco. Evolving towards incense, ink and deep, dark notes.
GUSTO
Monumental, muscular structure, with dense yet refined tannins. Very long, powerful finish, with extreme concentration and great persistence.
