Get to know the wine
Jacques Selosse's Substance is a Blanc de Blancs, 100% Chardonnay, from Grand Cru vineyards in Avize with vines over fifty years old, crafted using a Solera begun in 1986. Separate fermentation by parcel in oak barriques with indigenous yeasts and weekly bâtonnage. Natural and restrained malolactic. Ageing on the lees for a minimum of 6-7 years. Dosage with pure grape fructose: ~1.33 g/l. No filtration.
Oxidation as a virtuous element: this is Selosse's revolution. The Substance takes this philosophy to its extreme — every disgorgement is different, every bottle tells a different layer of the story of Avize from the 1980s to today.
