Compared to the Substance (single-village Avize), the V.O. offers greater territorial complexity. Burgundian barriques, indigenous yeasts, Extra Brut.

Get to know the wine
Jacques Selosse's V.O. is born from 100% Chardonnay from the Grand Crus of Avize, Cramant and Oger across three successive vintages (Solera). Separate fermentation by parcel in Burgundian barriques with indigenous yeasts, bâtonnage, natural malolactic.
Extra Brut dosage (1-2 g/l). No filtration. Compared to the Substance, the V.O. adds the dimension of multiple terroir: Cramant brings power, Oger gives warmth, Avize provides cutting minerality.
