Vouette & Sorbée's Saignée de Sorbée is born 100% from Pinot Noir of the lieu-dit Sorbée, vines 30-45 years old on Portlandian soil, with cuttings sourced from Domaine Lafarge of Volnay. Saignée method: short maceration and bleeding of the must. Fermentation with indigenous yeasts in oak.
Extended ageing on the lees. Absolute zero dosage. No filtration. Bertrand Gautherot, convinced by his friend Anselme Selosse, bottled the domaine's first Champagne in 2001. The Saignée de Sorbée is his most unique work: a Rosé of Burgundian depth.

“"Brilliant pink with ruby shades — unusual and unmistakable for a Rosé Champagne. Pepper, dark red fruits, spicy and chalky notes from the Kimmeridgian. On the palate vigorous and vinous, with a depth of fruit reminiscent of a sparkling Chambolle-Musigny. Long, spicy and mineral finish.
