Sauternes
Sauternes on Vinoly: Château d'Yquem, Premier Cru Supérieur, the most celebrated sweet wine in the world. Botrytised Sémillon and Sauvignon Blanc, liquid gold that ages a century.
Noble rot
In Sauternes the morning mists of the Ciron favour Botrytis cinerea, which dehydrates the berries and concentrates sugars and aromas: apricot, honey, saffron, orange peel. Harvests are in several passes, berry by berry, with tiny yields: at Yquem, one glass per vine.
Château d'Yquem
The only Premier Cru Supérieur of the 1855 classification, not made in unworthy vintages (1992, 2012). A wine that lasts a hundred years, drunk at 10-12 °C with foie gras, blue cheeses, pastries, or alone.
