La Montagne de Reims è il regno del Pinot Noir, che sui versanti esposti spesso a nord dona struttura, corpo e potenza agli assemblaggi, affiancato dallo Chardonnay e, nella Vallée de la Marne, da un'ampia presenza di Meunier, più adatto ai suoli argillosi e alle gelate. Villaggi Grand Cru come Verzenay, Verzy, Bouzy, Ambonnay e Mailly esprimono Pinot Noir di grande carattere. La vite è allevata bassa con potature corte codificate, le rese sono regolamentate e la raccolta è manuale, con pressatura soffice a grappolo intero per preservare la finezza dei mosti destinati al metodo classico.
