The commune of the Premiers Crus
Pauillac is the only Médoc commune with three Premiers Grands Crus Classés: Lafite Rothschild, Latour and Mouton Rothschild. Deep gravel terraces on the Gironde, perfect drainage, Cabernet Sauvignon dominant: wines of cassis, cedar, graphite and tobacco, with tannins that ask for fifteen years and last fifty.
The three châteaux
Latour, with the Enclos above the estuary, is the most powerful and consistent; Lafite the most elegant and aristocratic; Mouton the most opulent, with the famous artist labels since 1945. Alongside, the Seconds Crus Pichon Baron and Pichon Comtesse, and Lynch-Bages.
How to drink it
At 17-18 °C, decanted two hours if young. Pairings: Pauillac lamb, rib steak, game, aged cheeses.
